Savory Sausage Stuffing

Savory Sausage Stuffing is the ultimate comforting side dish, filled with rich flavors and hearty textures. This classic holiday dish combines savory sausage, sautéed onions, celery, and herbs with cubes of crusty bread, all baked together to perfection. The sausage adds a delicious depth and richness, while the herbs like sage, thyme, and parsley give it that signature holiday warmth. Crispy on top and soft inside, this stuffing is a must-have at Thanksgiving or Christmas, but it’s also a satisfying accompaniment to any roasted meat or poultry.

Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 10 cups cubed day-old bread (such as French or sourdough)
  • 1/2 cup unsalted butter
  • 1 large onion, diced
  • 3 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 1 tsp fresh sage, finely chopped (or 1/2 tsp dried)
  • 1/4 cup fresh parsley, chopped
  • 2 1/2 cups chicken or turkey broth
  • 2 large eggs, lightly beaten
  • Salt and pepper to taste

Instructions

  1. Prepare the bread: Preheat the oven to 350°F (175°C). Spread the cubed bread on a baking sheet and toast for about 10 minutes until lightly golden and crisp. Set aside.
  2. Cook the sausage: In a large skillet over medium heat, cook the sausage until browned and cooked through, breaking it into small pieces as it cooks. Remove from the skillet and set aside.
  3. Sauté the vegetables: In the same skillet, melt the butter. Add the onions, celery, and garlic, and cook for 5-7 minutes until softened. Stir in the thyme, sage, parsley, and a pinch of salt and pepper.
  4. Combine the stuffing: In a large mixing bowl, combine the toasted bread cubes, cooked sausage, and sautéed vegetables. Pour the broth over the mixture, tossing gently to combine. The bread should absorb the liquid but not become too soggy. Stir in the beaten eggs to bind everything together.
  5. Bake the stuffing: Transfer the stuffing mixture to a greased 9×13-inch baking dish. Cover with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden and crispy.
  6. Serve: Let the stuffing cool for a few minutes before serving.

This Savory Sausage Stuffing is packed with flavor, making it the perfect side dish for holiday gatherings or any special occasion!
