Ingredients:

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup celery, chopped
  • 1 cup peas (fresh or frozen)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and pepper to taste
  • Optional: fresh parsley, chopped (for garnish)

Instructions:

  1. Brown the Beef: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef cubes in batches, browning them on all sides. This step adds depth of flavor to the stew. Once browned, transfer the beef to a plate and set aside.
  2. Sauté the Aromatics: In the same pot, add the chopped onion and garlic. Sauté for about 3-4 minutes until softened and fragrant, scraping up any browned bits from the bottom of the pot.
  3. Combine Ingredients: Return the browned beef to the pot. Stir in the tomato paste, then add the beef broth, carrots, potatoes, celery, thyme, rosemary, bay leaves, salt, and pepper. Bring to a boil.
  4. Simmer: Reduce the heat to low, cover, and let the stew simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors are well combined. Stir occasionally, adding more broth or water if necessary.
  5. Add Peas: About 10 minutes before serving, stir in the peas. Cook until heated through.
  6. Serve: Remove the bay leaves and adjust the seasoning with additional salt and pepper if needed. Ladle the stew into bowls, garnish with fresh parsley, and serve warm.

This Savory Beef Stew is a comforting classic that not only fills the belly but also warms the soul, making it a beloved dish for any occasion!
