  • 1 celery stalk, finely chopped

  • 1/2 tsp dried thyme
  • 1/2 tsp dried sage
  • 1/4 tsp ground cinnamon (optional, for warmth)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese (plus more for topping)
  • 1/4 cup fresh parsley, chopped

Instructions:

  1. Roast the Squash:
    • Preheat the oven to 400°F (200°C).
    • Brush the inside of each acorn squash half with olive oil and season with salt and pepper.
    • Place the squash halves cut side down on a baking sheet lined with parchment paper.
    • Roast in the preheated oven for 30-35 minutes, or until the flesh is tender and easily pierced with a fork.
  2. Prepare the Sausage Filling:
