Ingredients:

  • 12 lasagna noodles
  • 1 pound Italian sausage (mild or spicy), casings removed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 jar (24 ounces) marinara sauce
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 15 ounces ricotta cheese
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 4 cups shredded mozzarella cheese
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. Cook the lasagna noodles: Bring a large pot of salted water to a boil. Add the lasagna noodles and cook according to the package instructions until al dente. Drain and set aside.
  3. Prepare the sausage sauce: In a large skillet, cook the Italian sausage over medium heat until browned and crumbled, about 5-7 minutes. Add the diced onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute. Add the marinara sauce, diced tomatoes, oregano, basil, and red pepper flakes (if using). Simmer the sauce for 10 minutes, allowing the flavors to meld together.
  4. Prepare the ricotta mixture: In a medium bowl, combine the ricotta cheese, egg, Parmesan cheese, and a pinch of salt and pepper. Mix until smooth and set aside.
  5. Assemble the lasagna: Spread a thin layer of the sausage sauce on the bottom of the prepared baking dish. Place 3 lasagna noodles over the sauce, slightly overlapping them. Spread one-third of the ricotta mixture over the noodles, followed by one-third of the sausage sauce. Sprinkle with 1 cup of shredded mozzarella cheese. Repeat the layers two more times, ending with the remaining mozzarella cheese on top.
  6. Bake the lasagna: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 20-25 minutes, or until the cheese is melted and bubbly, and the lasagna is heated through.
  7. Let it rest: Remove the lasagna from the oven and let it rest for 10-15 minutes before slicing. This allows the layers to set and makes for easier serving.
  8. Garnish and serve: Garnish with fresh basil or parsley, if desired, and serve warm.

Enjoy your Sausage Lasagna as a comforting, flavorful meal that’s perfect for sharing with family and friends!
