Saffron Rice

Ingredients:

  • 1 cup basmati or jasmine rice, rinsed
  • 1 ¾ cups water or chicken broth

  • 1/4 tsp saffron threads
  • 1 tbsp hot water (to steep the saffron)
  • Salt to taste
  • Optional garnish: chopped fresh parsley or toasted nuts

Instructions:

  1. Steep the Saffron: In a small bowl, add the saffron threads and 1 tablespoon of hot water. Let it steep for about 5 minutes to release the color and flavor.
  2. Cook the Rice: In a medium saucepan, heat the butter or olive oil over medium heat. Add the rinsed rice and stir for 1-2 minutes to coat the rice with butter and lightly toast it.
  3. Add Water and Saffron: Pour in the 1 ¾ cups of water (or broth), the saffron water, and a pinch of salt. Stir gently to combine.
  4. Simmer: Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes or until the rice is tender and the liquid is absorbed.
  5. Fluff and Serve: Remove the pan from the heat, let it sit covered for 5 minutes, then fluff the rice with a fork. Garnish with parsley or toasted nuts if desired.
