Rocket Salad

Ingredients:

  • 4 cups fresh rocket (arugula), washed and dried
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup shaved Parmesan cheese
  • 2 tablespoons pine nuts, toasted
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Juice of 1/2 lemon
  • Salt and pepper, to taste

Instructions:

  1. In a large salad bowl, place the fresh rocket leaves.
  2. Add the halved cherry tomatoes and shaved Parmesan.
  3. In a small pan, toast the pine nuts over medium heat until golden brown, about 2-3 minutes, stirring occasionally to avoid burning.
  4. Sprinkle the toasted pine nuts over the salad.
  5. In a small bowl, whisk together the olive oil, balsamic vinegar, lemon juice, salt, and pepper to make the dressing.
  6. Drizzle the dressing over the salad and toss gently to combine.
  7. Serve immediately, garnished with additional Parmesan if desired.
