Roasted Garlic Hummus

Ingredients:

  • 1 head of garlic
  • 2 tbsp olive oil (for roasting the garlic)
  • 1 can (15 oz) chickpeas, drained and rinsed

  • 3 tbsp olive oil (for the hummus)
  • 3 tbsp fresh lemon juice
  • 1 tsp ground cumin
  • Salt to taste
  • 2-3 tbsp water (to adjust consistency)

Instructions:

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of the garlic head to expose the cloves, drizzle with 2 tablespoons of olive oil, and wrap it in foil. Roast for 30-40 minutes, or until the garlic is soft and golden. Let cool slightly, then squeeze the roasted garlic out of the skins.
