Whether you’re serving them at a dinner party or as a cozy weeknight side, these roasted fingerling potatoes are always a crowd-pleaser.

Ingredients:

  • 2 pounds fingerling potatoes, halved lengthwise
  • 3 tablespoons olive oil
  • 2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried)
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • Optional: 1 tablespoon fresh parsley, chopped, for garnish

Instructions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
  2. In a large bowl, toss the halved fingerling potatoes with olive oil, rosemary, garlic powder, salt, and pepper, ensuring they are evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet, cut side down.
  4. Roast for 25-30 minutes, or until the potatoes are golden brown and crispy on the outside, and tender on the inside. Flip halfway through for even browning.
  5. Remove from the oven and sprinkle with fresh parsley, if desired.
  6. Serve warm and enjoy!
