Roasted Beef Tenderloin

Ingredients:

  • 3 lb beef tenderloin, trimmed
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 2 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tbsp coarse salt
  • 1 tsp black pepper
  • 1 tbsp Dijon mustard (optional)

Instructions:

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with foil and set aside.
  2. In a small bowl, combine the olive oil, minced garlic, rosemary, thyme, salt, and pepper to create the rub. If desired, mix in the Dijon mustard for added flavor.
