Roast Beef Barbecue

Ingredients:

  • 4 lbs beef chuck roast
  • 2 tbsp olive oil
  • 1 large onion, finely chopped

  • 1/4 cup apple cider vinegar
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce

Instructions:

  1. Preheat Oven and Prepare Meat: Preheat your oven to 325°F (163°C). Pat the beef chuck roast dry with paper towels, then season generously with salt and pepper.
  2. Sear the Beef: In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Sear the beef roast on all sides until browned, about 4-5 minutes per side. Remove the roast and set aside.

  4. Combine Sauce Ingredients: In a bowl, whisk together the barbecue sauce, beef broth, apple cider vinegar, brown sugar, Worcestershire sauce, smoked paprika, and ground cumin.
