RISOTTO WITH BACON AND PEAS

Risotto with Bacon & Peas is a creamy, comforting dish that combines the rich flavors of crispy bacon with the sweetness of peas.   • 6 slices bacon, chopped

Instructions:

  1. Cook the bacon:
    • In a large skillet or pot, cook the chopped bacon over medium heat until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and drain on paper towels. Leave about 1-2 tablespoons of bacon fat in the skillet.
  2. Sauté the onion and garlic:
    • Add the chopped onion to the skillet and sauté in the bacon fat for 3-4 minutes until softened. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  3. Toast the rice:
    • Stir in the Arborio rice and cook for 1-2 minutes, allowing the rice to absorb the flavors and become lightly toasted.
  4. Deglaze with wine (optional):
    • Pour in the white wine and stir constantly until the wine is absorbed by the rice. If you prefer not to use wine, skip this step and proceed to adding the broth.
  5. Add the broth:
    • Begin adding the warm broth to the rice, one ladleful at a time, stirring frequently. Allow the liquid to be absorbed before adding the next ladle of broth. Continue this process until the rice is creamy and tender, about 18-20 minutes.
  6. Add the peas and bacon:
    • When the risotto is nearly finished, stir in the frozen peas and crispy bacon. Cook for another 2-3 minutes until the peas are heated through.
  7. Finish the risotto:
    • Remove the risotto from heat and stir in the butter and grated Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
  8. Serve:
