Ricotta Cookies Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup ricotta cheese (whole milk or part-skim)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon

For the Glaze:

  • 1 cup powdered sugar
  • 2 tablespoons lemon juice (or milk)
  • 1/2 teaspoon vanilla extract
  • Optional: sprinkles for decoration

Instructions:

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar together until light and fluffy, about 2-3 minutes. Add the ricotta cheese, egg, vanilla extract, and lemon zest, and mix until smooth and well combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined, being careful not to overmix.
  5. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Bake for 12-14 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  7. To make the glaze, whisk together powdered sugar, lemon juice (or milk), and vanilla extract until smooth. Drizzle the glaze over the cooled cookies and add sprinkles if desired.
  8. Let the glaze set for about 30 minutes before serving.

Enjoy the pillowy softness and citrusy sweetness of these delightful Ricotta Cookies!
