RICH CHOCOLATE MOUSSE

Ingredients:

  • 6 oz (170g) high-quality dark chocolate, chopped
  • 3 tablespoons unsalted butter, room temperature
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • Whipped cream and chocolate shavings, for garnish (optional)

Instructions:

  1. Melt the Chocolate: In a heatproof bowl set over a pot of simmering water, melt the chocolate and butter together, stirring occasionally until smooth. Remove from heat and let it cool slightly.
  2. Beat Egg Yolks and Sugar: In a separate bowl, whisk the egg yolks with half the sugar (2 tablespoons) until pale and thick. Gently fold the egg yolk mixture into the melted chocolate.
  3. Whip Egg Whites: In a clean bowl, beat the egg whites until they form soft peaks. Gradually add the remaining 2 tablespoons of sugar and continue beating until stiff peaks form. Gently fold the egg whites into the chocolate mixture in two additions until no white streaks remain.
  4. Whip the Cream: In another bowl, whip the heavy cream with the vanilla extract until it forms soft peaks. Fold the whipped cream into the chocolate mixture until smooth.
  5. Chill: Spoon the mousse into serving dishes or cups and refrigerate for at least 2 hours, or until firm.
  6. Serve: Top each serving with whipped cream and chocolate shavings if desired.
