Rhubarb Cherry Pie

  • 1 teaspoon vanilla extract
  • 1 double pie crust (store-bought or homemade)
  • 1 tablespoon butter, cut into small pieces
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (optional, for sprinkling)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the chopped rhubarb, pitted cherries, granulated sugar, cornstarch, salt, lemon juice, and vanilla extract. Toss until the fruit is evenly coated and the mixture is well combined.
  3. Roll out one half of the pie crust and fit it into a 9-inch pie dish, allowing the excess dough to hang over the edges.
  4. Pour the fruit mixture into the pie crust, spreading it out evenly. Dot the top of the filling with the small pieces of butter.
  5. Roll out the second half of the pie crust and place it over the filling. Trim the excess dough and crimp the edges to seal. Cut a few small slits in the top crust to allow steam to escape.
