Red Pepper Relish

Ingredients:

  • 4 large red bell peppers, finely chopped

  • ½ teaspoon red pepper flakes (optional for heat)
  • 1 tablespoon olive oil

Instructions:

  1. Prepare the vegetables: Start by finely chopping the red bell peppers and onion. Mince the garlic and set everything aside.
  2. Cook the peppers and onion: In a large skillet, heat the olive oil over medium heat. Add the chopped red peppers and onion. Cook, stirring occasionally, for about 10 minutes or until the peppers start to soften.
  3. Add garlic and spices: Stir in the minced garlic, salt, and red pepper flakes (if using). Cook for an additional 2-3 minutes until fragrant.
  4. Add vinegar and sugar: Pour in the apple cider vinegar and sugar. Stir well to combine and bring the mixture to a simmer. Reduce the heat to low and let it cook for about 30-40 minutes, stirring occasionally, until the liquid reduces and the mixture thickens.

  6. Cool and store: Once the relish has thickened, remove it from the heat and allow it to cool completely. Transfer to a jar or airtight container and store in the refrigerator for up to 2 weeks. For longer storage, process the jars in a water bath canner following standard canning procedures.
