Raw Carrot Cake Bites

These Raw Carrot Cake Bites are a delightful, no-bake treat that captures all the cozy flavors of a classic carrot cake in a bite-sized form. Made with wholesome ingredients like fresh grated carrots, sweet dates, crunchy walnuts, and a hint of warming spices, these bites are perfect for a quick snack or a healthy dessert. They offer a satisfying blend of textures with the softness of the carrots and dates, the crunch of the nuts, and the creaminess of the optional coconut or cashew frosting. Not only are these bites delicious, but they’re also packed with nutrients, making them a great guilt-free indulgence.

Ingredients:

  • For the Cake Bites:
    • 1 cup grated carrots (about 2 medium carrots)
    • 1 cup Medjool dates, pitted and roughly chopped
    • 1 cup walnuts (or pecans), chopped
    • 1/2 cup shredded unsweetened coconut
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1/4 teaspoon ground ginger
    • 1 teaspoon vanilla extract
    • Pinch of sea salt
  • For the Optional Frosting:
    • 1/2 cup raw cashews, soaked for 4 hours (or boiled for 10 minutes)
    • 2 tablespoons maple syrup
    • 1/4 cup coconut milk
    • 1 teaspoon vanilla extract
    • Pinch of sea salt

Instructions:

  1. Prepare the Cake Bites:
    • In a food processor, combine the grated carrots and dates. Pulse until they are well combined and the mixture begins to stick together.
    • Add the walnuts, shredded coconut, ground cinnamon, ground nutmeg, ground ginger, vanilla extract, and a pinch of sea salt. Process until all ingredients are evenly combined, but still have some texture.
    • Scoop about a tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture.
    • Place the bites on a tray lined with parchment paper and refrigerate for at least 30 minutes to firm up.
  2. Optional Frosting:
    • Drain the soaked cashews and add them to a blender with the maple syrup, coconut milk, vanilla extract, and a pinch of sea salt. Blend until smooth and creamy.
    • Once the bites are chilled, you can either drizzle the frosting over the bites or dip the top of each bite into the frosting for a “frosted” look.
    • Refrigerate the frosted bites for another 10-15 minutes to let the frosting set.
  3. Serve and Enjoy:
    • These Raw Carrot Cake Bites can be enjoyed straight out of the fridge and are perfect for a quick snack or a light dessert. Store them in an airtight container in the refrigerator for up to a week or freeze for longer storage.
