RASPBERRY ICE CREAM

Raspberry Ice Cream is a perfect balance of sweet and tart, with fresh raspberries adding a burst of flavor to a creamy ice cream base. It’s a refreshing treat that’s great for summer or any time you’re craving a fruity dessert. This recipe can be made with an ice cream maker or adapted for no-churn preparation.

Ingredients:

  • 2 cups fresh or frozen raspberries (plus extra for garnish)
  • ¾ cup granulated sugar
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • Pinch of salt

Instructions:

  1. Prepare the raspberries:
    • In a small saucepan, combine the raspberries and ¼ cup of sugar. Cook over medium heat for 5-7 minutes, stirring occasionally, until the raspberries break down and release their juices.
    • Remove from heat and strain the raspberry mixture through a fine mesh sieve to remove the seeds. Set aside and let it cool.
  2. Make the ice cream base:
    • In a large mixing bowl, whisk together the remaining ½ cup sugar, heavy cream, whole milk, vanilla extract, lemon juice, and a pinch of salt until the sugar is fully dissolved.
  3. Combine and chill:
    • Stir the cooled raspberry puree into the ice cream base. Mix well until everything is combined.
    • Cover the mixture and refrigerate for at least 1-2 hours, or until completely chilled.
  4. Churn the ice cream:
    • Pour the chilled mixture into your ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes, until it reaches a soft-serve consistency.
  5. Freeze:
    • Transfer the churned ice cream to an airtight container and freeze for at least 4 hours, or until firm.

No-Churn Method:

  • For a no-churn option, whip 2 cups of heavy cream to stiff peaks. In a separate bowl, mix the sweetened raspberry puree with 1 can of sweetened condensed milk. Fold the whipped cream into the raspberry mixture and freeze in an airtight container for 6 hours or overnight.
  1. Serve:
    • Scoop the raspberry ice cream into bowls or cones and garnish with fresh raspberries if desired.

Enjoy this creamy, refreshing Raspberry Ice Cream that’s perfect for cooling off on a hot day or treating yourself to a fruity, homemade dessert!
