Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth or water
  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1 carrot, thinly sliced
  • 1 cup spinach or kale, chopped
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Fresh parsley or cilantro for garnish
  • Lemon wedges for serving (optional)

Instructions:

  1. In a medium saucepan, combine the quinoa and vegetable broth (or water). Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes, or until the quinoa is cooked and the liquid is absorbed. Fluff with a fork and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened.
  3. Stir in the garlic, red bell pepper, zucchini, and carrot. Cook for 5-7 minutes, or until the vegetables are tender.
  4. Add the spinach (or kale), cumin, salt, and pepper. Stir well and cook for another 2-3 minutes, until the greens are wilted.
  5. Remove the skillet from heat and gently mix in the cooked quinoa until everything is well combined.
  6. Garnish with fresh parsley or cilantro and serve with a squeeze of lemon juice for a bright, zesty flavor.

This Quinoa with Vegetables is a healthy, satisfying dish that can be enjoyed on its own or paired with your favorite protein for a complete meal!
