Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth (or water)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced mushrooms
  • 1 celery stalk, diced
  • 1/2 cup chopped carrots
  • 1/2 tsp dried thyme
  • 1/2 tsp dried sage
  • 1/4 tsp dried rosemary
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup toasted pecans or walnuts (optional)
  • 1/4 cup dried cranberries (optional)

Instructions

  1. Cook the quinoa: In a medium saucepan, bring the vegetable broth to a boil. Add the rinsed quinoa, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is tender and the liquid is absorbed. Fluff the quinoa with a fork and set aside.
  2. Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion, garlic, mushrooms, celery, and carrots. Sauté for about 5-7 minutes, or until the vegetables are softened.
  3. Add the herbs: Stir in the thyme, sage, rosemary, salt, and pepper, and cook for another minute to allow the flavors to blend.
  4. Combine quinoa and vegetables: Add the cooked quinoa to the skillet with the sautéed vegetables. Stir to combine, making sure the quinoa is evenly coated with the herbs and vegetables.
  5. Finish the stuffing: Stir in the chopped parsley, toasted nuts, and dried cranberries, if using. Adjust the seasoning with more salt and pepper, if needed.
  6. Serve: Serve the quinoa stuffing warm as a side dish for holiday meals, or enjoy it as a healthy accompaniment to roasted meats or vegetables.

This Quinoa Stuffing is a hearty, gluten-free alternative to traditional stuffing, packed with wholesome ingredients and perfect for any occasion!
