Ingredients
- 4 large bell peppers, tops cut off and seeds removed
- 1 cup quinoa, rinsed
- 2 cups vegetable broth or water
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 can (14.5 oz) diced tomatoes, drained
- 1 tsp ground cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1 cup shredded cheddar or mozzarella cheese (optional)
- Fresh cilantro or parsley for garnish
Instructions
- Cook the quinoa: In a medium saucepan, combine the quinoa and vegetable broth (or water). Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the quinoa is cooked and the liquid is absorbed. Fluff with a fork and set aside.
- Preheat the oven: Preheat your oven to 375°F (190°C).
- Prepare the filling: In a large skillet, heat a little oil over medium heat. Add the diced onion and garlic, sautéing for 3-4 minutes until softened. Stir in the black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper. Cook for another 5 minutes until everything is heated through. Add the cooked quinoa to the skillet and stir to combine.
- Stuff the peppers: Arrange the bell peppers in a baking dish. Spoon the quinoa mixture into each pepper, packing it down gently. If using cheese, sprinkle it over the top of each stuffed pepper.
- Bake the peppers: Cover the baking dish with foil and bake for 30 minutes. If using cheese, remove the foil for the last 10 minutes to allow the cheese to melt and turn golden.
- Garnish and serve: Garnish with fresh cilantro or parsley and serve hot.
