Ingredients:

  • 1 cup cooked quinoa
  • 1 1/2 cups rolled oats
  • 1/2 cup almond butter (or peanut butter)
  • 1/4 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries or raisins
  • 1/4 cup chopped nuts (almonds, walnuts, or pecans)
  • 1/4 cup sunflower or pumpkin seeds
  • 1/2 teaspoon ground cinnamon
  • Pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. Mix the wet ingredients: In a large bowl, combine the almond butter, honey, melted coconut oil, and vanilla extract. Stir until smooth.
  3. Add the dry ingredients: Stir in the cooked quinoa, oats, dried cranberries, chopped nuts, seeds, cinnamon, and salt. Mix everything together until well combined.
  4. Press into the pan: Transfer the mixture into the prepared baking pan, pressing it down firmly and evenly with the back of a spoon or spatula.
  5. Bake: Bake for 20-25 minutes, or until the edges are golden brown. Remove from the oven and allow the bars to cool completely in the pan.
