Pumpkin Seed Toffee

This Pumpkin Seed Toffee is a delightful treat that brings together the nutty flavor of pumpkin seeds with the rich, buttery goodness of classic toffee. The seeds add a unique crunch and a hint of earthiness that perfectly balances the sweet and slightly bitter caramelized sugar. With a sprinkling of sea salt on top, each bite is a perfect blend of salty, sweet, and crunchy, making it an irresistible addition to any dessert spread. Ingredients:

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 cup water
  • 1/4 cup light corn syrup
  • 1 cup roasted and salted pumpkin seeds
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt (optional, for sprinkling)

Instructions:

  1. Prepare the Baking Sheet: Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
  2. Cook the Toffee Base: In a medium, heavy-bottomed saucepan, melt the butter over medium heat. Add the sugar, water, and corn syrup. Stir constantly until the sugar is dissolved and the mixture starts to boil.
  3. Boil the Mixture: Allow the mixture to boil without stirring until it reaches 300°F (149°C) on a candy thermometer, also known as the hard crack stage. This should take about 10–15 minutes. The mixture will turn a deep amber color.
  4. Add Vanilla and Pumpkin Seeds: Quickly stir in the vanilla extract and half of the pumpkin seeds (1/2 cup). Be careful as the mixture will bubble up slightly.
  5. Spread the Toffee: Immediately pour the hot toffee onto the prepared baking sheet. Spread it evenly with a spatula to your desired thickness.
  6. Top with Remaining Pumpkin Seeds: Sprinkle the remaining 1/2 cup of pumpkin seeds over the top of the toffee while it is still hot. Gently press the seeds into the toffee with a spatula. If desired, sprinkle a pinch of sea salt over the top for an extra salty-sweet flavor.
  7. Cool and Break the Toffee: Allow the toffee to cool completely at room temperature until it is hard, about 1–2 hours. Once cooled, break the toffee into pieces using your hands or a sharp knife.
  8. Store the Toffee: Store the toffee pieces in an airtight container at room temperature for up to 2 weeks.
