Pumpkin Risotto

Ingredients:

  • 2 tablespoons olive oil

  • 4–5 cups vegetable or chicken broth, warmed
  • 1 cup pumpkin puree (canned or fresh)

  • ½ cup grated Parmesan cheese
  • 2 tablespoons unsalted butter
  • Salt and black pepper, to taste

Instructions:

  1. Prepare the Base:
    Heat the olive oil in a large skillet or saucepan over medium heat. Add the onion and sauté for 3–4 minutes until softened. Stir in the garlic and cook for another minute, until fragrant.
  2. Toast the Rice:
    Add the Arborio rice to the skillet and stir to coat it in the oil. Cook for 1–2 minutes, until the edges of the rice grains become translucent.
  3. Deglaze with Wine:
    Pour in the white wine and stir until it is mostly absorbed. This step adds depth to the risotto’s flavor.
  4. Cook with Broth:
    Begin adding the warm broth, one ladleful at a time, stirring frequently and allowing the liquid to be absorbed before adding more. Continue this process for about 18–20 minutes, or until the rice is tender and creamy but still slightly al dente.
  5. Incorporate Pumpkin and Spices:
    Stir in the pumpkin puree, nutmeg, and thyme. Mix well to evenly distribute the pumpkin throughout the risotto. Cook for another 2–3 minutes to warm through.
  6. Finish with Butter and Cheese:
    Remove the skillet from the heat and stir in the Parmesan cheese and butter. Adjust seasoning with salt and black pepper to taste.
  7. Serve and Garnish:
    Spoon the risotto into bowls and garnish with toasted pumpkin seeds and chopped parsley for added texture and flavor.
