Instructions:

  1. Prepare the pumpkin: Preheat the oven to 375°F (190°C). Peel and thinly slice the pumpkin or butternut squash into ¼-inch thick slices. Set aside.
  2. Make the béchamel sauce: In a saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Stir in the flour and cook for another minute. Gradually whisk in the cream or milk, stirring constantly to avoid lumps. Let the mixture simmer for a few minutes until it thickens. Season with thyme, salt, pepper, and a pinch of nutmeg, if using.
  3. Assemble the gratin: Grease a baking dish and layer the pumpkin slices evenly. Pour the béchamel sauce over the pumpkin, making sure all the slices are coated. Sprinkle the grated cheese evenly on top. If you like extra crunch, sprinkle breadcrumbs over the cheese.
