  • 1 small pumpkin (about 2 lbs), peeled, seeded, and cubed

  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 can (14 oz) coconut milk
  • 1 cup vegetable broth
  • 1 tbsp tomato paste
  • 1 tsp salt, or to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan for serving

Instructions:

  1. Heat the oil in a large pot over medium heat. Add the chopped onion and sauté for 5 minutes, until softened and golden.
  2. Stir in the garlic and ginger, cooking for another minute until fragrant.
  3. Add the curry powder, turmeric, and cumin, stirring to coat the onions and release the flavors.
  4. Add the cubed pumpkin, coconut milk, vegetable broth, tomato paste, and salt. Stir to combine, then bring the mixture to a simmer.
  5. Cover the pot and cook for 20-25 minutes, or until the pumpkin is tender and the curry has thickened slightly. Stir occasionally to prevent sticking.
  6. Taste and adjust seasoning if needed. Garnish with fresh cilantro.
