  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 1/2 cups chicken broth
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper (optional, for heat)
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh cilantro (optional, for garnish)
  • Toppings: sour cream, shredded cheese, avocado, or tortilla chips (optional)

Instructions

  1. Sauté the aromatics: Heat the olive oil in a large pot over medium heat. Add the onion and bell pepper, and cook for 4-5 minutes until softened. Stir in the garlic and cook for another minute until fragrant.
  2. Cook the chicken: Add the ground chicken to the pot and cook, breaking it up with a spoon, until browned and cooked through.
  3. Build the chili: Stir in the pumpkin puree, diced tomatoes, black beans, kidney beans, and chicken broth. Mix in the chili powder, cumin, smoked paprika, cayenne (if using), and a pinch of salt and pepper.
