Prune Cake

This old-fashioned prune cake is a delightful treat that combines the natural sweetness of prunes with a moist, spiced cake base. The prunes not only add a rich flavor but also keep the cake incredibly moist. Ingredients:

For the Cake:

  • 1 cup pitted prunes
  • 1 cup water
  • 1 1/2 cups granulated sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

For the Glaze:

  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1/4 cup buttermilk
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a small saucepan, combine the prunes and water. Bring to a boil, then reduce heat and simmer for about 10 minutes, or until the prunes are soft. Remove from heat, allow to cool slightly, and then mash the prunes with a fork or blend them to a smooth puree.
  3. In a large mixing bowl, beat together the sugar, oil, and eggs until well combined. Add the mashed prunes and mix until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, allspice, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Stir in the vanilla extract.
  5. Pour the batter into the prepared baking pan and smooth the top. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  6. While the cake is baking, prepare the glaze. In a small saucepan, melt the butter over medium heat. Add the sugar and buttermilk, stirring constantly until the sugar is dissolved. Bring to a boil and cook for 1 minute. Remove from heat and stir in the vanilla extract.
  7. When the cake is done, remove it from the oven and immediately pour the warm glaze over the hot cake. Use a spatula to spread the glaze evenly over the top.
  8. Allow the cake to cool completely in the pan before serving. Enjoy your prune cake with a cup of tea or coffee!
