Pressure-Cooker Shredded Chicken Gyros are a quick and easy way to bring the flavors of a classic Greek street food into your kitchen. Tender, seasoned chicken is cooked to perfection in a pressure cooker, making it juicy and full of Mediterranean spices in a fraction of the time. Pile the shredded chicken into warm pita bread, and top it with fresh veggies like tomatoes, cucumbers, and red onions, along with a tangy homemade tzatziki sauce. These gyros are perfect for a weeknight dinner that feels light but still satisfying, or a fun, customizable meal for a crowd.

Ingredients:

For the Chicken:

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon ground coriander
  • Salt and pepper, to taste
  • 1/2 cup chicken broth or water
  • Juice of 1 lemon

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt
  • 1 cucumber, grated and drained of excess liquid
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper, to taste

For Serving:

  • Pita bread or flatbread
  • Sliced tomatoes
  • Sliced cucumbers
  • Sliced red onion
  • Feta cheese (optional)
  • Fresh parsley (optional for garnish)

Instructions:

  1. Season the chicken: In a small bowl, mix the oregano, cumin, garlic powder, paprika, coriander, salt, and pepper. Rub the spice mixture all over the chicken breasts.
  2. Pressure cook the chicken: Add the olive oil to the pressure cooker and set it to sauté mode. Once hot, sear the chicken breasts for 2-3 minutes on each side. Pour in the chicken broth and lemon juice. Cancel sauté mode, secure the lid, and cook on high pressure for 10 minutes. Allow the pressure to release naturally for 5 minutes, then manually release any remaining pressure.
  3. Shred the chicken: Once the chicken is done cooking, remove it from the pressure cooker and use two forks to shred it. Return the shredded chicken to the cooker to absorb the juices.
  4. Make the tzatziki sauce: In a medium bowl, combine the Greek yogurt, grated cucumber, olive oil, lemon juice, garlic, fresh dill, salt, and pepper. Mix well and refrigerate until ready to serve.
  5. Assemble the gyros: Warm the pita bread and fill it with shredded chicken. Top with sliced tomatoes, cucumbers, red onion, and tzatziki sauce. Add feta cheese and fresh parsley if desired.

Enjoy these flavorful and easy Pressure-Cooker Shredded Chicken Gyros for a delicious Mediterranean-inspired meal!
