Pressure Cooker Pepper Steak

Pressure Cooker Pepper Steak is a quick and flavorful dish that brings together tender slices of beef, vibrant bell peppers, and a savory sauce with a hint of sweetness. This recipe is perfect for busy weeknights when you want to enjoy a comforting and hearty meal without spending too much time in the kitchen. The pressure cooker does all the heavy lifting, infusing the beef with the rich flavors of soy sauce, garlic, and ginger, while keeping the peppers crisp-tender. Serve this over a bed of steamed rice for a satisfying and complete meal.

Ingredients:

  • 1 ½ pounds beef sirloin or flank steak, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 onion, thinly sliced
  • 3 bell peppers (red, green, and yellow), thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • ½ cup low-sodium soy sauce
  • ¼ cup beef broth
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil (optional)
  • Cooked white rice, for serving
  • Sliced green onions and sesame seeds, for garnish

Instructions:

  1. Sear the Beef: Set your pressure cooker to the sauté function and heat the vegetable oil. Once hot, add the sliced beef in batches, searing until browned on all sides. Remove and set aside.
  2. Sauté the Vegetables: In the same pot, add the sliced onion, bell peppers, garlic, and ginger. Sauté for 2-3 minutes until the vegetables begin to soften.
  3. Add the Sauce Ingredients: Return the beef to the pot and add the soy sauce, beef broth, and brown sugar. Stir to combine.
  4. Pressure Cook: Secure the lid of the pressure cooker and set it to high pressure. Cook for 10 minutes, then perform a quick release of the pressure.
  5. Thicken the Sauce: Once the pressure has been released, open the lid and set the cooker back to the sauté function. Stir in the cornstarch slurry and cook for another 2-3 minutes until the sauce has thickened to your desired consistency.
  6. Add Finishing Touches: Stir in the rice vinegar and sesame oil, if using. Taste and adjust seasoning if needed.
  7. Serve: Serve the pepper steak over cooked white rice, garnished with sliced green onions and sesame seeds.
