PRESSURE COOKER BEEF DAUBE PROVENÇAL

Beef Daube Provençal is a traditional French stew from the Provence region, known for its deep, rich flavors and aromatic herbs. When made in a pressure cooker, this elegant dish comes together in a fraction of the time while still delivering the tender, slow-cooked texture of beef. Ingredients:

  • 2 pounds beef chuck, cut into 2-inch cubes

  • 2 tablespoons tomato paste
  • 1 tablespoon flour

  • 2 large carrots, sliced
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Sear the beef: Set the pressure cooker to “Sauté” mode and heat the olive oil. Season the beef cubes with salt and pepper, then brown them in batches, about 3-4 minutes per side. Remove the beef and set aside.
  2. Sauté the onions and garlic: In the same pot, add the diced onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for another minute.
  3. Deglaze with wine: Pour in the red wine and use a wooden spoon to scrape up any browned bits from the bottom of the pot. Let the wine simmer for 2-3 minutes.
  4. Add remaining ingredients: Stir in the beef broth, diced tomatoes, tomato paste, flour, thyme, rosemary, bay leaf, and olives (if using). Return the browned beef to the pot, along with the sliced carrots.
  5. Pressure cook: Secure the lid and set the pressure cooker to high pressure for 35 minutes. Once the cooking time is done, allow the pressure to release naturally for 10 minutes, then manually release any remaining pressure.
  6. Finish and serve: Carefully open the lid and stir the stew. Adjust seasoning with salt and pepper if needed. Garnish with fresh parsley and serve the Beef Daube Provençal over mashed potatoes, pasta, or with crusty bread.
