  • 200g (7 oz) egg noodles or rice noodles

  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tbsp sesame oil
  • 1 tsp chili flakes (optional, for spice)
  • 2 tbsp vegetable oil
  • 1 tsp cornstarch mixed with 2 tbsp water (optional, for thickening sauce)
  • Juice of 1 lime
  • 1 tbsp sesame seeds, for garnish
  • 2 spring onions, finely sliced, for garnish

Instructions:

  1. Cook the noodles: Boil the noodles according to package instructions, then drain and rinse with cold water to stop cooking. Toss with a drizzle of sesame oil to prevent sticking and set aside.
  2. Prepare the sauce: In a small bowl, mix soy sauce, oyster sauce (if using), lime juice, and chili flakes. Set aside.
  3. Stir-fry the prawns: Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the prawns and cook for 2-3 minutes until pink and opaque. Remove and set aside.
