Ingredients:

  • 12 oz rotini or bowtie pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup yellow bell pepper, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1 cup mozzarella cheese, cubed or mozzarella balls (bocconcini)
  • 1/2 cup salami or pepperoni, sliced (optional)
  • 1/4 cup fresh parsley, chopped

Dressing:

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 clove garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Cook the pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
  2. Prepare the vegetables: While the pasta is cooking, chop the tomatoes, cucumber, bell peppers, red onion, and olives. Cube the mozzarella and slice the salami or pepperoni if using.
