The result is a deliciously creamy and cheesy dish with a rustic, comforting feel. Whether you’re looking for a gluten-free alternative to traditional lasagna or simply a delicious new way to enjoy potatoes, this dish will be a hit with everyone at the table.

Ingredients:

  • 4 large russet potatoes, peeled and thinly sliced
  • 1 lb ground beef or Italian sausage (or sautéed vegetables for a vegetarian option)
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 jar (24 oz) marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Fresh parsley, for garnish

Instructions:

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Prepare the filling: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for 3-4 minutes until softened. Add the ground beef or sausage and cook until browned, breaking it up as it cooks. Drain any excess fat and stir in the marinara sauce, oregano, basil, salt, and pepper. Simmer for 5-7 minutes, then remove from heat.
  3. Layer the lasagna: Arrange a layer of thinly sliced potatoes on the bottom of the prepared baking dish, slightly overlapping them. Spread a portion of the meat sauce over the potatoes, followed by dollops of ricotta cheese. Sprinkle a layer of shredded mozzarella and Parmesan cheese on top.
  4. Repeat layers: Repeat the layering process (potatoes, sauce, cheese) until all the ingredients are used, finishing with a layer of cheese on top.
  5. Bake: Cover the dish with foil and bake for 45 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
  6. Serve: Let the potato lasagna cool for 10 minutes before serving. Garnish with fresh parsley and enjoy!

This Potato Lasagna is creamy, cheesy, and full of flavor, offering a unique and delicious spin on a classic comfort food that’s sure to satisfy!
