Ingredients:

  • 1 cup mashed potatoes (no butter or milk added)
  • 1 cup sugar
  • 2 large eggs
  • 1/4 cup butter, melted
  • 1/2 cup milk
  • 3 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • Vegetable oil (for frying)

Instructions:

  1. Prepare the Dough: In a large mixing bowl, combine the mashed potatoes and sugar, mixing until well blended. Add the eggs, melted butter, and milk, and mix until smooth.
  2. Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, nutmeg, and salt. Gradually add the dry ingredients to the potato mixture, mixing until a soft dough forms.
  3. Roll and Cut: On a floured surface, roll out the dough to about 1/2-inch thickness. Use a doughnut cutter or two round cutters (one large, one small) to cut out the doughnuts and doughnut holes.
  4. Heat the Oil: In a deep fryer or large pot, heat the oil to 375°F (190°C). Carefully fry the doughnuts, a few at a time, until golden brown on both sides, about 2-3 minutes per side.
  5. Drain and Cool: Remove the doughnuts from the oil with a slotted spoon and drain on paper towels. Let them cool slightly.
  6. Optional Toppings: Coat the doughnuts in powdered sugar, cinnamon sugar, or glaze with your favorite icing.

Enjoy your homemade potato doughnuts warm for the best taste!
