Potato Cheese Casserole is a rich, creamy, and comforting dish that combines tender potatoes with gooey melted cheese and a blend of savory seasonings. This casserole is perfect for a family dinner, holiday meals, or as a side dish to accompany roasted meats or grilled vegetables. With layers of thinly sliced potatoes baked in a creamy cheese sauce, and a crispy, golden top, every bite is packed with warmth and flavor. It’s a crowd-pleaser that’s both indulgent and satisfying, and it can easily be made ahead for convenience.

Ingredients:

  • 2 pounds russet potatoes, peeled and thinly sliced
  • 2 cups shredded sharp cheddar cheese
  • 1 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1/2 cup milk
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon ground paprika
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup breadcrumbs (optional, for topping)
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions:

  1. Prepare the Potatoes: Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray. Peel the potatoes and slice them into thin rounds, about 1/8 inch thick. Set aside.
  2. Cook the Aromatics: In a medium saucepan, melt the butter over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes. Stir in the dried thyme, paprika, salt, and pepper. Cook for another minute to allow the spices to bloom.
  3. Make the Cheese Sauce: Add the heavy cream and milk to the saucepan with the onions and garlic. Bring the mixture to a simmer, stirring occasionally, until it’s heated through. Stir in the shredded cheddar cheese and grated Parmesan, and continue to cook until the cheese has fully melted, forming a creamy sauce.
  4. Layer the Casserole: Arrange half of the sliced potatoes in the prepared baking dish. Pour half of the cheese sauce over the potatoes, spreading it evenly. Repeat with another layer of potatoes and the remaining cheese sauce.
  5. Bake: Cover the casserole with aluminum foil and bake for 40-45 minutes, or until the potatoes are tender when pierced with a fork. Remove the foil, sprinkle breadcrumbs on top (if using), and return to the oven for an additional 10-15 minutes, or until the top is golden and crispy.
  6. Serve: Let the casserole rest for 5-10 minutes before serving. Garnish with chopped fresh parsley for a pop of color and extra flavor.

Potato Cheese Casserole is the ultimate comfort food, with layers of creamy, cheesy goodness that are hard to resist. Whether you’re serving it at a holiday gathering or enjoying it as a weeknight dinner, this dish will be a guaranteed hit at your table!
