Pörkölt (Hungarian Stew) Recipe

Ingredients:

  • 2 tbsp Hungarian sweet paprika
  • 1 tsp smoked paprika (optional)
  • 1 tsp caraway seeds
  • 1/2 tsp black pepper
  • 1 cup beef broth
  • 1 large tomato, diced
  • 2 bell peppers, diced
  • Salt to taste
  • 1 bay leaf
  • Fresh parsley, chopped (for garnish)
  • Optional: sour cream for serving

Instructions:

  1. Sauté the Onions: In a large pot or Dutch oven, heat the lard or oil over medium heat. Add the chopped onions and cook, stirring frequently, until they are soft and golden, about 8-10 minutes.
  2. Add the Garlic and Paprika: Stir in the minced garlic, Hungarian paprika, smoked paprika (if using), and caraway seeds. Cook for 1-2 minutes, making sure the paprika doesn’t burn.
  3. Cook the Meat: Add the beef or pork to the pot and stir to coat the meat in the paprika and onion mixture. Cook until the meat is browned on all sides, about 10 minutes.
  4. Add Broth and Vegetables: Pour in the beef broth and add the diced tomato, bell peppers, black pepper, bay leaf, and a pinch of salt. Bring the stew to a simmer, then reduce the heat to low.
