  • 12 oz egg noodles, cooked (or your preferred side)

Instructions:

  1. Prepare the Pork: Season the pork slices with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the pork in batches to avoid overcrowding, cooking for 2-3 minutes per side until browned. Remove the pork and set aside.

  4. Add the Broth and Seasonings: Stir in the beef or chicken broth, Dijon mustard, and smoked paprika. Bring the mixture to a simmer, allowing it to thicken slightly.
  5. Finish the Stroganoff: Lower the heat to medium-low and stir in the sour cream until smooth. Return the pork slices to the skillet and let them simmer in the sauce for 5-7 minutes, or until heated through and tender. Adjust seasoning with additional salt and pepper if needed.
  6. Serve: Serve the pork stroganoff over cooked egg noodles, rice, or mashed potatoes. Garnish with fresh parsley for a pop of color and flavor.
