Pork & Mushroom Stir-fry

Ingredients:

  • 1 lb pork tenderloin, thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 tsp fresh ginger, grated
  • 8 oz mushrooms (shiitake or button), sliced
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 2 green onions, chopped (for garnish)
  • 1 tsp sesame oil (optional)
  • Salt and pepper, to taste
  • Cooked rice or noodles, for serving

Instructions:

  1. In a bowl, combine the sliced pork, soy sauce, oyster sauce, rice vinegar, and cornstarch. Mix well and let marinate for 10-15 minutes.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated pork and stir-fry for 3-4 minutes until browned and cooked through. Remove from the pan and set aside.
  3. In the same pan, add the remaining tablespoon of oil. Stir-fry the onion, garlic, and ginger for 1-2 minutes until fragrant.
  4. Add the mushrooms, bell pepper, and carrot to the pan. Cook for 3-4 minutes until the vegetables are tender but still crisp.
  5. Return the cooked pork to the pan and toss everything together. Drizzle with sesame oil (if using) and season with salt and pepper to taste.
  6. Serve hot over rice or noodles, garnished with chopped green onions.
