Pork Chop Casserole

Pork Chop Casserole is a hearty, comforting dish that transforms simple ingredients into a satisfying meal perfect for chilly evenings. This casserole layers tender, juicy pork chops with creamy, sliced potatoes and a rich sauce that’s typically made from cream of mushroom or chicken soup, along with onions and cheese for added flavor and texture. As the casserole bakes, the pork chops become incredibly tender and the potatoes absorb the flavors of the sauce, creating a delicious melding of tastes. This one-dish meal is not only easy to prepare but also a crowd-pleaser, making it ideal for a family dinner or a casual gathering where you want to impress without too much fuss.

Ingredients:

  • 4 bone-in pork chops, about 1 inch thick
  • Salt and pepper, to taste
  • 2 tablespoons vegetable oil
  • 1 large onion, thinly sliced
  • 4-5 medium potatoes, peeled and thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (optional for added color and flavor)
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Preheat the Oven and Prepare the Ingredients:
    • Preheat your oven to 350°F (175°C). Season the pork chops on both sides with salt and pepper.
  2. Brown the Pork Chops:
    • In a large skillet over medium-high heat, heat the vegetable oil. Add the pork chops and sear until golden brown, about 3-4 minutes per side. Remove the pork chops from the skillet and set aside.
  3. Layer the Casserole:
    • In a greased 9×13 inch baking dish, layer half of the sliced potatoes, half of the sliced onions, and sprinkle with half of the garlic powder, paprika, and half of the cheese. Place the browned pork chops on top of this layer. Repeat with the remaining potatoes and onions, garlic powder, and paprika.
  4. Prepare the Sauce:
    • In a small bowl, mix the cream of mushroom soup with milk until well combined. Pour this mixture evenly over the layered pork chops and vegetables in the baking dish.
  5. Bake the Casserole:
    • Cover the baking dish with aluminum foil and bake in the preheated oven for 1 hour. Uncover, sprinkle with the remaining cheese, and bake for an additional 30 minutes or until the pork chops are cooked through and the potatoes are tender.
  6. Serve:
    • Garnish the casserole with chopped fresh parsley before serving. Serve hot directly from the dish.

Pork Chop Casserole is a classic dish that brings together simple, wholesome ingredients in a bake that’s both flavorful and filling.
