POHA

  • Sev (for garnish, optional)

Instructions:

  1. Prepare the Poha: Rinse the poha in a fine mesh strainer under cold water for about 2-3 minutes. Let it sit to drain while you prepare the other ingredients.
  2. Sauté the Vegetables: In a large skillet or pan, heat the oil over medium heat. Add the mustard seeds and let them crackle. Then, add the chopped onions and sauté until they turn translucent.
  3. Cook the Potatoes: If using, add the diced potatoes and green chilies to the pan. Cook for about 5-7 minutes, or until the potatoes are tender. Stir in the green peas and cook for an additional 2-3 minutes.
  4. Mix in Spices: Sprinkle in the turmeric powder and salt. Stir well to combine, ensuring the vegetables are evenly coated with the spices.
  5. Combine with Poha: Gently add the rinsed poha to the skillet. Mix everything carefully to avoid breaking the poha, ensuring it is well combined with the vegetables and spices. If desired, add sugar for a hint of sweetness.
  6. Finish and Serve: Drizzle lemon juice over the poha and stir gently. Cook for an additional 2-3 minutes until heated through. Remove from heat and garnish with fresh cilantro and sev, if using.
