Ingredients:
- 1 cup raisins
- 1 cup currants
- 1/2 cup chopped dried figs or dates

- 1/4 cup brandy or rum (optional)

- 1/2 cup brown sugar
- 3 large eggs
- 1 1/2 cups fresh breadcrumbs
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- Zest of 1 lemon
- Zest of 1 orange
- 1/4 cup milk
Instructions:
- In a medium bowl, combine the raisins, currants, dried figs, and candied peel (if using). Pour the brandy or rum over the fruit and let it soak for at least 1 hour or overnight for extra flavor.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time.
- Add the soaked fruit mixture, breadcrumbs, flour, baking powder, cinnamon, nutmeg, cloves, lemon zest, and orange zest to the bowl. Stir everything together until well combined.
- Gradually mix in the milk until the batter is thick but still spoonable.
- Grease a pudding mold or heatproof bowl and spoon the batter into it. Cover the top with a layer of parchment paper and then tightly with aluminum foil.
- Place the pudding mold in a large pot with enough boiling water to come halfway up the sides of the mold. Cover the pot with a lid and steam the pudding for about 3 hours, checking occasionally to ensure the water doesn’t evaporate (add more water as needed).
- After steaming, carefully remove the pudding from the pot and let it cool slightly before unmolding.
