Plum Cobbler

Plum Cobbler is a delicious, comforting dessert that showcases the natural sweetness and slight tartness of fresh plums. Ingredients:

  • 6-8 ripe plums, pitted and sliced
  • ¾ cup granulated sugar (adjust based on sweetness of plums)
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 tbsp cornstarch
  • 1 ½ cups all-purpose flour
  • 2 tbsp granulated sugar (for topping)
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, cold and cubed

Instructions:

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a large bowl, combine the sliced plums, ¾ cup sugar, lemon juice, vanilla extract, cinnamon, and cornstarch. Toss to coat the plums evenly, then pour the mixture into the prepared baking dish.
  3. In another bowl, whisk together the flour, baking powder, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
  4. Pour in the milk and stir just until a soft dough forms.
  5. Drop spoonfuls of the dough over the plum filling, leaving a few gaps for the fruit to bubble through. Sprinkle the dough with the remaining 2 tablespoons of sugar.
  6. Bake for 35-40 minutes, or until the topping is golden brown and the fruit is bubbling.
  7. Allow the cobbler to cool slightly before serving.
