Ingredients:

  • 4 large bell peppers (red, green, yellow, or orange), halved and seeds removed
  • 1 cup marinara or pizza sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup mini pepperoni slices or cooked crumbled sausage (or any preferred pizza toppings)
  • ¼ cup sliced black olives (optional)
  • ¼ cup sliced mushrooms (optional)
  • ¼ cup chopped onions (optional)
  • 1 tsp Italian seasoning
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Prepare the Peppers: Preheat your oven to 375°F (190°C). Place the pepper halves cut-side up in a baking dish. If you like a softer pepper, pre-bake them for 10 minutes.
  2. Add the Fillings: Spoon a layer of marinara sauce into each pepper half. Sprinkle with Italian seasoning. Layer with half the shredded mozzarella, then add your toppings like pepperoni, sausage, olives, mushrooms, and onions.
  3. Bake: Top with the remaining mozzarella cheese. Cover the dish with foil and bake for 20 minutes.
  4. Finish and Serve: Remove the foil and bake for another 10 minutes or until the cheese is bubbly and golden. Garnish with fresh basil or parsley if desired.
