  • For the Crust:
    • 1 sheet of puff pastry, thawed

Instructions:

  1. Prepare the Filling:
    • Preheat your oven to 400°F (200°C).
    • In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it into small pieces, about 5 minutes.
    • Add the pepperoni slices and cook for an additional 2 minutes.
    • Add the chopped onion, bell pepper, and mushrooms to the skillet. Cook until the vegetables are softened, about 5 minutes.
    • Stir in the minced garlic and cook for 1 minute until fragrant.
    • Add the tomato sauce, dried oregano, dried basil, salt, and pepper. Simmer for 5-7 minutes until the sauce is thickened slightly.
  2. Assemble the Pot Pies:
    • Divide the sausage and vegetable mixture evenly among four ovenproof ramekins or small baking dishes.
    • Sprinkle 1/2 cup of shredded mozzarella cheese over the top of each filling.
  3. Prepare the Crust:
    • Roll out the puff pastry on a lightly floured surface. Cut the pastry into four squares, each large enough to cover the top of the ramekins.
    • Place one pastry square over each ramekin, pressing the edges to seal. Trim any excess pastry.
  4. Bake the Pot Pies:
    • Brush the tops of the pastry with the beaten egg for a golden finish.
    • Place the ramekins on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the pastry is golden brown and puffed.
