For the Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar, sifted
  • 1 teaspoon vanilla extract

Directions:

  1. Prepare the Cupcakes:
    • Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
    • In a medium bowl, sift together the flour, baking soda, baking powder, salt, and cocoa powder. Set aside.
    • In a large bowl, cream together the sugar and butter until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
    • Mix the buttermilk and food coloring together. Alternately whisk in the flour mixture and buttermilk, beginning and ending with the flour mixture. Stir in the vinegar.
    • Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
    • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool completely before frosting.
  2. Make the Cream Cheese Frosting:
    • In a large bowl, beat together the cream cheese and butter until smooth and creamy. Gradually add the powdered sugar, one cup at a time, beating well after each addition. Stir in the vanilla extract.
    • Continue to beat until the frosting is light and fluffy.
  3. Decorate the Cupcakes:
    • Using a piping bag fitted with a star nozzle, pipe the cream cheese frosting onto the cooled cupcakes.
    • Optional: Garnish with pink sprinkles, edible pearls, or a light dusting of cocoa powder for an elegant finish.
