Pierogi Lasagna is a delicious, comforting fusion dish that combines the flavors of traditional pierogi with the ease of a layered lasagna. Made with layers of pasta, mashed potatoes, sautéed onions, cheese, and bacon, this dish is perfect for potlucks or family dinners when you want all the goodness of pierogi but without the labor-intensive process.
Ingredients:
- 12 lasagna noodles (cooked according to package instructions)
- 6 cups mashed potatoes (homemade or instant)
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 cup cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 cup sour cream (optional, for serving)
- 6 strips bacon, cooked and crumbled (optional)
- 3 tablespoons butter
- Salt and pepper, to taste
- Fresh chives or parsley (for garnish)
Instructions:
- Prepare the mashed potatoes:
- If making homemade mashed potatoes, boil peeled and chopped potatoes until tender, about 15-20 minutes. Drain, then mash with butter, salt, and pepper to taste. Set aside. You can also use leftover or instant mashed potatoes for convenience.
- Sauté the onions and garlic:
- In a skillet, melt 3 tablespoons of butter over medium heat. Add the chopped onion and garlic, and sauté until softened and golden, about 7-8 minutes. Remove from heat and set aside.
- Assemble the lasagna:
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
- Spread a thin layer of mashed potatoes on the bottom of the dish. Lay 3-4 lasagna noodles on top.
- Spread a layer of mashed potatoes over the noodles, then sprinkle with sautéed onions, garlic, and some cheddar and mozzarella cheese. Repeat this layering process (noodles, mashed potatoes, onions, and cheese) until you have used all the ingredients, ending with a layer of cheese on top.
- Bake the lasagna:
- Cover the lasagna with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for another 10 minutes, or until the cheese on top is bubbly and golden brown.
- Add toppings:
- Once baked, remove the lasagna from the oven and let it cool for a few minutes. If desired, sprinkle crumbled bacon and fresh chives or parsley on top for extra flavor and texture.
- Serve:
- Slice and serve the Pierogi Lasagna warm with a dollop of sour cream on the side, if desired.
Enjoy this comforting, cheesy Pierogi Lasagna as a hearty main dish that brings the flavors of pierogi to your table without the hassle of making individual dumplings! Perfect for a family meal or a cozy weekend dinner.
