Ingredients:

  • 1 lb ground beef
  • 1 (16 oz) package frozen pierogi (potato and cheese)
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the ground beef: In a large skillet over medium heat, brown the ground beef until fully cooked, about 6-7 minutes. Drain excess fat and set the beef aside.
  2. Sauté the vegetables: In the same skillet, add olive oil and sauté the diced onion and bell pepper until they soften, about 4-5 minutes. Add the garlic and cook for another minute until fragrant.
  3. Cook the pierogi: Push the vegetables to the side of the skillet and add the frozen pierogi in a single layer. Cook for about 2-3 minutes on each side, until the pierogi are golden and slightly crisp.
  4. Combine and season: Add the cooked ground beef back to the skillet along with smoked paprika, oregano, salt, and pepper. Pour in the beef broth and stir everything together. Allow the mixture to simmer for 5 minutes, letting the flavors meld.
  5. Add cheese: Sprinkle shredded cheddar cheese over the skillet and cover it. Let it cook for 2-3 more minutes, or until the cheese melts.
  6. Serve: Garnish with fresh parsley, if desired, and serve hot.
