Pesto Grilled Cheese

Pesto Grilled Cheese is a delightful twist on the classic sandwich, bursting with vibrant, herbaceous flavor. The creamy richness of melted cheese pairs perfectly with the fresh, garlicky notes of pesto, while crispy, golden-brown bread holds it all together. This sandwich is great for a quick lunch or dinner when you want something comforting yet packed with flavor. The combination of gooey mozzarella or sharp cheddar and homemade or store-bought pesto elevates this grilled cheese to a gourmet level that’s perfect for pesto lovers.

Ingredients:

  • 4 slices of bread (sourdough or rustic white work well)
  • 2 tbsp butter, softened
  • 2-3 tbsp pesto (homemade or store-bought)
  • 4 slices mozzarella or sharp cheddar cheese
  • Optional: fresh basil leaves, spinach, or sun-dried tomatoes

Instructions:

  1. Heat a skillet over medium heat.
  2. Spread butter evenly on one side of each bread slice.
  3. Spread pesto on the unbuttered side of two slices of bread.
  4. Place a slice of cheese on top of the pesto (add fresh basil, spinach, or sun-dried tomatoes if using), then top with another slice of cheese.
  5. Place the remaining slices of bread, butter-side up, on top to form sandwiches.
  6. Carefully transfer the sandwiches to the heated skillet. Cook for 3-4 minutes on each side, pressing down gently with a spatula, until the bread is golden brown and the cheese has melted.
  7. Remove from the skillet and let cool slightly before slicing.
