Pecan Tassies

Ingredients:

For the Crust:

  • ½ cup unsalted butter, softened
  • 3 oz cream cheese, softened
  • 1 cup all-purpose flour

For the Filling:

  • 1 egg
  • ¾ cup brown sugar, packed
  • 1 tbsp unsalted butter, melted
  • 1 tsp vanilla extract
  • ½ cup pecans, finely chopped
  • Pinch of salt

Instructions:

  1. Prepare the Crust: In a medium bowl, beat together the softened butter and cream cheese until smooth. Gradually mix in the flour until a soft dough forms. Divide the dough into 24 small balls and press each ball into the bottom and up the sides of mini muffin cups to form the pastry shells. Refrigerate the dough-lined cups while you prepare the filling.
  2. Prepare the Filling: In a small bowl, whisk together the egg, brown sugar, melted butter, vanilla extract, and salt until well combined. Stir in the chopped pecans.
  3. Preheat your oven to 350°F (175°C). Spoon about 1 teaspoon of the filling into each pastry-lined cup, being careful not to overfill.
  4. Bake for 20-25 minutes, or until the crust is golden brown and the filling is set.
  5. Let the pecan tassies cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
