These no-bake bars are quick to make, with a rich, chewy texture complemented by a layer of smooth chocolate on top. They’re a fantastic dessert or snack for any occasion, whether you’re hosting a gathering, packing lunchboxes, or simply craving a sweet bite. With just a few ingredients, these bars offer a satisfying mix of sweet, salty, and crispy in every bite.

Ingredients:

  • 3 cups crispy rice cereal
  • 1 cup creamy peanut butter
  • ½ cup honey or corn syrup
  • ¼ cup sugar (optional, for extra sweetness)
  • 1 ½ cups semisweet chocolate chips
  • 1 tbsp coconut oil or butter (optional, for smoother chocolate)

Instructions:

  1. Prepare the pan: Line an 8×8-inch baking dish with parchment paper, leaving a little overhang for easy removal later.
  2. Melt the peanut butter mixture: In a medium saucepan, combine the peanut butter, honey (or corn syrup), and sugar (if using). Heat over medium-low heat, stirring constantly until the mixture is smooth and well-combined. Remove from heat.
  3. Mix with cereal: In a large bowl, pour the peanut butter mixture over the crispy rice cereal. Stir until the cereal is evenly coated.
  4. Press into the pan: Transfer the peanut butter-cereal mixture into the prepared pan. Press it down firmly and evenly using a spatula or the back of a spoon.
  5. Make the chocolate topping: In a microwave-safe bowl, melt the chocolate chips with the coconut oil (or butter) in 20-second intervals, stirring in between, until smooth.
  6. Top the bars: Pour the melted chocolate over the pressed cereal mixture, spreading it out evenly to cover the entire surface.
  7. Chill: Place the pan in the refrigerator for 1-2 hours, or until the chocolate has set and the bars are firm.
  8. Cut and serve: Once chilled, use the parchment paper overhang to lift the bars out of the pan. Cut into squares or rectangles and serve. Store in the refrigerator for up to a week.

These bars are sure to satisfy your peanut butter and chocolate cravings!
